Suggestions for Managing Subfolders of PICS?

I have around 8-10 gig of Pictures in a folder called My Stuff.
In that folder there are 27 folders and in those folders some have multiple sub folders.

I do not want all Sub Folders to be on my iPhone, I am having a hard time syncing Pics... So I created a folder and actually COPIED around 3-4 gig of pics and made folders Family Florida, Family B-day, Dog 1st day, Dog Rain, House Pond, House Siding...

That is FINE but it is not the easiest to manage. If I get new photos off my camera they go in My Stuff, and then I have to copy them to the iTunes pic folder, any other way of doing this???

I have an 8gig iPhone 3g and even with a 16gig I would still run into the problem of syncing pics in sub folders that I do not want on the iPhone.
Any suggestions?
