Having said that, the easiest short-term solution is to revert back to a POP3 connection for now. The POP3 servers are less loaded and can better handle the extra load.

What is the best interface option to use if most of my Hotmail use is primarily sending photos taken with the iPhone?
I will recieve mostly text emails without attachments.
There is a way to indirectly access Hotmail via 3rd party email source. www.fastmail.net (POP3) gives access to your hotmail via hourly updates. Access your XXXX@fastmail.net account which has all your hotmail email. P.S. its a subscription email service, but it works I'm using it.
Oooooor depending on your hotmail, you can forward emails from hotmail to gmail which does have pop3I have 2 hotmail accounts one allowed fwding to gmail the other didnt, but did allow me to forward to other hotmail accounts, so i just fwded to the other hotmail acct that did allow gmail fwding. hey presto all email comes to the iphone.
I figured out what the pop3 address is for outgoing hotmail but not the incoming mail address
Trying to set up Hotmail as pop on the iPhone is an exercise in futility. Sign up for an account with one of the supported mail services (gmail,yahoo,aol,.mac) and forward your hotmail. It solves a great many headaches.
As far as the server names go you can use cwmx.com as the SMTP for any email account regardless of who it's with (providing the phone isn't hacked and is still with ATT) It's a generic ATT server that seems too work consistently.
