Backing Up iPhone w/ iTunes, Help Plz

I was just wondering how you back up the phones contacts, photos, music etc. I want to make a new back up so that itll be a carbon copy of my phone at the moment. Right now theres a back up but i dunno if its updated as in if it has my most recent pictures and additions backed up. How do i make a new one?

I'm not sure how much of a backup itunes does but when you sync it makes a backup. Like I said it may be a backup of your settings vs a full backup with music and photos.
