I'm for a little of both. Somewhat crisp, but still a little chewy
I fry up one side until just a slight wisp of smoke comes off, then flip the bacon, cut the heat and let them coast for a minute. Removal before they look done is key because the heat will carry over and continue to cook it on the plate/paper towel. If you don't pull it while it's still a bit fatty, it will be too crisp and the texture gets all weird and waxy. And it's a lot saltier when it's too crispy, too.
and if you do overdo it, crush it up and save for bacon bits.
