When you hit delete on your iPhone with gmail you are actually only archiving it not deleting it. If you look for a tag in your inbox labled Deleted Messages you will find you email there.

Just use pop settings instead of the default imap settings for gmail. That way it downloads a copy of the message then whatever you do with it on your phone won't be reflected on your computer.

Not necessarily. Depends on which method you used to set up your Gmail. If you use the iPhone's default settings for Gmail, delete actually moves it to [Gmail]/Trash. If you set it up Google's recommended way, delete does archive. I used the custom Google method for a long time, but I found I delete WAY more email than I archive, so I prefer a "delete" to actually delete, and when I have the occasional thread I want to archive, I just move it to "All Mail".

One thing you could do is, instead of deleting it, you can maintain sync of your folders by creating a "temp" folder, where you can move messages to be read on your Mac later.
