Is there a way for me to perform a backup without syncing? I just want to plug my phone into itunes and back it up and unplug it...

Sorry to say but there is no way to do that. Far as i know. Cause Apple wants you to sync all your stuff so if your phone dies or crashes you have EVERYTHING on your computer and what not. I would call and ask Apple though and see what they say about it.

Thats not true. When in iTunes and you see your iPhone in the device list on the left. Right click and click back up.
