1. Capital letters, 2. Contacts - delete all?

Hi - I'm a new Apple user and have just got the Touch 2G. I've read the very helpful sticky and picked up some points already, but can't get the capital letters to work. No problem with holding and sliding to get a number in the middle of text, but holding letters doesn't seem to give the option of capitals.

Secondly, can I delete all my Contacts at once so I can start again? I synced and ended up with virtually 3 entries for each person as I had some in different groups. I tried the suggestion found elsewhere to go via itunes and unticked 'Sync' from the 'sync with Outlook' option, but that didn't work. If I restart, will it wipe out my email settings, which I've got no problems with?
