I'm looking for something similar to MxTube but that will work with Vimeo/AOL video, etc, etc- is there an app out there for this?

I know I can download videos from these sites on my PC and convert them- is there anyway to do it on the fly?

Yes.

Copy/paste (or remember the link if you don't have copy/paste installed) the URL of the video over here: http://keepvid.com . (You need to have the Safari DL plugin installed). You should then have the option to download the video or to play it directly.

I just tried this out for myself (I downloaded a "high quality" YouTube MP4" and it worked perfectly. I copied the YouTube video URL, pasted it into keepvid.com, and downloaded the video. Plays fine in dTunes (after renaming the file to NAME.mp4 in MobileFinder).
