ok, did some more on the Iphone and found that I can not delete out of the photo library or either folder from the phone. That only works on a picture on the camera roll.

You cannot delete pictures from the phone except for those that you took with the camera itself. The ones that are put on the phone through syncing can only be removed by syncing again. You need to remove them from the folder on your computer and then sync again. It will then delete them off the phone.
As far as the picture being seen by others problem, if your phone is jailbroken there is a program called swaplibrary that will move the pictures so that they are unseen until you swap back. It is actually designed to allow you to sync with two seperate computers but one of the great side effects of the program is that it changes your library (music, videos and images) when you click the icon. I sync information at home that is um.. questionable and then at work I swaplibrary and sync only work information. When I am at work and someone grabs my phone, they wont see any of the information from my home syncing. Hope that helps.

Nope can't delete pics out of photo library when u show someone pics just dont go to photo library..

Yep, I figured it out.

1. You can have multiple folders on the Phone
2. the pictures in those folders will all show in the Library
3. you can not delete pictures from the phone you need to do so through I tunes.
4. Seeing as how I enjoy having some "racy" pictures available to show to a couple of my perv friends I will email those to myself and just keep them hidden that way
