This is not actually using mobile versions of Websites. It's a proxy server that can digest complex Webpages and deliver them in a more mobile-friendly format--all faster than downloading the entire Website directly to the mobile device.
You can test this by trying sites that have no mobile version at all, and you will see that it still works, and is still faster.

This not a black and white issue, and for me nothing to do with "cool." It's a
great tip for when you need to view a Website under EDGE as quickly as possible. Doesn't mean you have to use it all the time.
Again, to the OP, thanks for mentioning this great tip! I was actually wondering if there were any kind of compression/simplification proxies that would work on the iPhone.
