I love the iPhone, but if I cannot find a way to save and edit email attachments, so that they can then be reattached and sent via email, I will have to return the phone and stick with the 8330. The only option for this is Docs to Go via the Exchange route. Docs to Go comes in two flavors, one supporting Exchange. With that version, you can download attachments, edit, and send them off again. Otherwise, WiFi transfer between your PC where you get your emails and the iPhone is the only route.
