FYI this takes a while to do. I did this to my 1st gen yesterday and it took an hour and a half. Don't know if the 3g would be faster or not.

Nope 3g no faster. Erased my 3g when 3gs came in . Told me it'd take 2 hours and it took 2 hours.

If I sell my phone and want to leave it jailbroken what is the best way to take my info off while leaving it jailbroken?

Restoring and then rejailbreaking and unlocking would be the safest.
