Default Can an unactivated v1.0.2 be updated to v1.1.1 before jailbreaking and unlocking?

I want to activate, jailbreak, & unlock a v1.0.2 iphone using the most current method (for the v1.1.1 - WIFI w/out a computer). Can I update from 1.0.2 to 1.1.1 right out of the box by connecting to itunes, entering recovery mode, hold SHIFT and click restore (to select the v1.1.1), then continue w/ the method to unlock a v1.1.1?

I don't want to mistakenly use outdated information to unlock the v1.0.2 iphone.

The 4th&5th digits of the serial # of the phone is 30 so I'm assuming its v1.0.2.
