well, is it 6 PM eastern only? will my store (central) start selling at 5 or no?

Different for each time zone. In other words, it'll be 6PM wherever you live. (PS- Most things Apple aren't based on Eastern Standard Time but Pacific Standard time, as Apple HQ is in Cupertino, CA)
