I can walk you through the process, but I need to ask you a couple of questions first. Are you on a PC or a Mac? Secondly, do you have AppTap Installer installed on your iPhone? If so, have you loaded the BSD Subsystem yet? I ask the last two questions because it appears that you have Summerboard running on your iPhone. If AppTap Installer is already installed on your iPhone, everything else is then made much easier.
OpenSSH is a program that provides for a secure shell session, like a secure hyperterminal session (in Windows speak) between your computer and your iPhone. As such all you need, once OpenSSH is installed and configured, is WiFi connectivity to access your iPhone. Jailbreaking the iPhone to replace graphics, ringtones (YES, ringtones - these won't show up as ringtones on iTunes, but WILL on your iPhone), etc... is necessary. It is simple to set up and configure, and as easy to use as dragging and dropping in an FTP program. The program I use, Fugu, is actually SFTP (Secure FTP), so the interface is exactly the same as the FTP interface.
