Default restoring

I'm still at 1.0.2. I would like to restore my iPhone and keep the same firmware... Does iTunes let you do that or when you restore it automatically downloads the latest version (1.1.1 in this case)?

I have a GoPhone and I'm afraid that moving on to 1.1.1 will block my phone

In iTunes go to Preference>General>uncheck "Check for updates automatically.
Select the iPhone icon on the lefts side of iTunes.
Perform a restore by shift clicking on the Restore button. Select 1.0.2. Restore. If in doubt, disable internet connection to prevent the dreaded 1.1.1 update. Good luck!

Could you do the same thing to downgrade from 1.1.1 to 1.0.2?

Downgrading from 1.1.1 to 1.0.2 is another process. Just do a search as there are plenty of info floating around.
With the recent jailbreak you have more options now. If you're running 1.0.2 and enjoying your mods currently, there's still no reason to update, really. Given the pace of the current jailbreak, who knows. Even I might update to 1.1.1 someday or some months!
But I'm very happy with 1.0.2 at the moment.
