Okay, I'm working again... and with iTunes 7.7.1 and iPhone OS 2.0.1!
I had to a restore on the phone, then iTunes gave me the option of using a previous backup or treating the phone like a new iPhone to be synced. I performed the restore using the backup first with the same issues of no music and no apps. So I tried a restore and selected the new phone option. After synching it (selecting the playlist, videos, etc.) I can access all of my tunes and videos that are on my iPhone.
For the apps I simply downloaded a free app via the iPhone while on wifi (not sure if being on 3G or edge would work the same) and once I entered my password to my iTunes account and downloaded the app, all of my 3rd party apps work again.
For the record I am running iTunes on a PC with windows XP - but I have a feeling this will work for those running OSX as well.

2.0.1 didnt fix any of my problems. I havent got the laggy keyboard yet so hopefully thats fixed but my text alert still goes randomly silent for no reason requiring a restart.
It seems like I am getting less edge signal strength too.

I'm in the same boat as you. And randomly yesterday my phone said it was corrupted and I had to do a restore, luckily it allowed me to choose a backup.
