It should be rather simple. restore your phone through iTunes as you normally would (just click restore). Let it put 3.0.1 on your phone and restore your backup (or set up as new, however you prefer). After the restore process is complete, open redsn0w and where it says browse, select the firmware for 3.0 (build 7a341). Do not select the 3.0.1 build 7a400. follow the instructions in redsn0w and you should be all set.

Do you not have a sim at all? If you have a sim card for at&t it should have activated. What did itunes say? iphone say?

iPhone next year probably will follow suit. As of today the 3Gs doesn't have it. Will most likely need the hardware to support it.
