Could anyone kindly help? Thanks.
Try the iPhone Software forum instead. This forum is more for general iphone questions while the Software forum is more for hacking and unlocking.

On your Home page, where you see all the icons, like Safari, Ipod, Caculator, Calendar etc. Click on the icon Settings, and go on from there.

You can doctor it up...

/System/Library/Frameworks/CoreTelephony.framework/Support/UnknownCarrier.plist can be edited and used to make your settings real nice

Fill in the blanks - and upload, it's magic. Here's my O2_UK.plist - If you're on O2, this is hot to trot. If not, you can probably guess what to change. You will need to know your carrier's Country Code (MCC) and Network Code (MNC) as they're in there too.

What does editing the EDGE settings accomplish? What can you change that will amount to something tangible?

if you haven't unlocked and switched network, then no benefit at all. If the phone is being used on a network it doesn't know about, a change in the settings may be needed to make things work.
