Every time Apple releases a firmware update, you should wait and see if it's safe to upgrade. If confirmed it is, all of the modifications - be it themes, apps, anything that you received through jailbreaking - will disappear. You will then have to wait a few weeks for the current firmware to be jailbroken. In other words, jailbreak is
not a irreversible process; you can undo it any time by performing a Restore in iTunes.
Jailbreaking can present problems. When doing it, you are modifying parts of the system that are not intended to be tampered with. Therefore, the phone may become unstable, may crash, and be vulnerable to unwanted connections (hackers).
So long as you choose not to "unlock" the iPhone, AT&T users are perfectly safe.
Flash is completely unavailable on a stock or a jailbroken iPhone. There is no location to download or install it.
