i would assume she is lying becuase she WORKS at a apple store..but who knows? girls have been lying to me my whole life!
I can't give you a solid answer, but I'd say sometimes they can tell, sometimes they can't. I can tell you Geniuses have utilities on their Macs that aren't available to the public that they use when working on iPhones that they most likely use to try and check for evidence of a jailbreak. However, I've heard stories of people that were jailbroken, then restored their devices, and had no problem with receiving service on their phones at the Apple Store.
