have you tried to restore through ziphone as well? cos if that works then restore through itunes and set up as a totally new phone

Yeah, I tried to do that (and just tried again) but... when trying to go into Recovery Mode I can only get the PwnageTool pineapple logo on screen. Then iTunes says it's recognised an iPhone in Recovery Mode, I go to the ipsw on my computer which I've always used before (have also tired just letting go to the Apple update site) but then it just keeps flashing between the pineapple and the white Apple logo, and then gives the message "The iPhone "iPhone" could not be restored. An unknown error occurred (1611)" and ends up just showing the full-screen 'Steve-waving-his-arms' icon. That's it.
I can't seem to restore it to original through the manual restore system so even ZiPhone can't do its thing - it's as though PwnageTool has locked everything else out, including iTunes.
Confused... and frustrated as this is meant to be so straight forward.
