This is what I see, and my recently installed themes are in here, and I've neve installed Summerboard on my 3G:
You're in the wrong Library themes. Not /private/var/mobile/Library, just /Library. See that bar at the top of Cyberduck with the path in it? Click it and select the root level (/). Then open the Library folder you see.
I'm curious what can I do through winterboard? I have some thmes through cydia but they all have things I don't like about them.
Anything, really. All elements of the iPhone are theme-able with it. Icons, sliders, volume fills, pop-ups, UIImages, everything. Read through this tutorial.
