NEW to Jailbreaking

As the title says, I am new to jailbreaking. I just recently used redsn0w 0.8 on my 3.0.1 3GS and am good to go. I just had a few questions/concerns:

1. If I were to hard reset my phone, would I lose all my Cydia apps and settings?

2. If I wanted to revert back (unjailbreak) to factory default settings (everything stock) would a restore on itunes do it for me?
