jailbreak + restore

Once jailbroken, how can I restore the settings etc from my iPhone from before. Interested in keeping the apps, mail and settings, pics, music and so on.

After your phone is done restoring and reboots. You'll come to a screen that says "Set up you iPhone". Your backup will be there to select. After you restore your settings, the phone will reboot again. It will sync again and load your music back on. It's a pretty long process depending on how much music you have to reload.
