1.1.1 modding? need help

ok so i have 1.0.2 right now and i want to get 1.1.1 atleast so im wondering if i jailbreak 1.1.1 with like jailbreakme.com n stuff and i want to like use costumize and stuff like that to change the look, can i change the whole thing? or like is there something thats idfferent like the itunes thing i remember when 1.1.1 first was jailbroken u couldnt switch that icon around with springboard or something like that so im just wondering if i get the 1.1.1 jailbroken will i be able to switch anything lol?
