Here's a couple things to try.
Unplug the USB cable when it hangs/freezes and quickly plug it back in. Reboot the computer with the iPhone connected. Try a new USB cable. Also, try a different computer.

If you do take it to the Apple Store bring your computer, even if it is a desktop, to do the restore. They will not restore your phone on their computers.
The most they do in the store is to hold the home and power button.

Thats not true, I have been to the apple store and they restored my phone there and then. As for the ninja, he actually lives within 30mins or so from me, so I know he can go to one of two Apple Stores we have in Manchester.
Depending on the problem, apple will do there upmost to help. They would rather fix something than give a replacement.

Maybe there are different rules and regulations from country to country. They told me the only form of reset they can perform in the store the home and power button, not a full restore. Who knows...
