How long does it take to backup your phone generally? It's possible your backup file is corrupt and when you try to restore to it, it's creating problems.

Could you be using the wrong firmware. For example, you may be using the 3GS firmware on the 3G?

Then rule out my first suspicion of a corrupt backup file because that's fairly standard time.

What is the error you are getting that causes you to restore each time? If you can't remember it, next time it happens write it down before closing the dialog box and tell us what says.
