I've often wondered about this. I just read what Hawk wrote in the "16g vs. 32" thread:
"I have 768 songs, about 65 apps, and 3 movies. I still have 7.2 GB free space on my 16GB 3G.
Honestly, I went with the 16GB 3G phone because I was close to using up all the space on my 8GB phone. I prefer to have at least 2GB free no matter what for the OS to use as a swap file and to help prevent crashes from full memory."
So what is your take on how much free space is optimal?
I've been trying to leave at least a GB free on my 8GB v1. I'm now at 895 MB and I have noticed some "stutters" while running apps that I hadn't noticed before.
Thanks, all.

I have the 32 gig. I have 3648 songs, 60 pics, all my contacts, 26 apps and 3 movies and I have 9 gigs left. I keep thinking I should just add 3-4 more movies and still have 2-3 gigs left

I have the 16GB iPhone 3G, and I have tons of music. Nearly 90GB worth. S I take the most important songs, the "can't not have" music, and load them in a playlist named "iPhone". That gets sync'd over, and with about 200MB of apps, 90MB of photos, and the "other" space using 300-500MB, I'm left with a little over 1-1.5 GB. I leave the space there so I can throw a movie or a few TV shows on the device when I'm traveling. Otherwise it's 90% music.
