Now its stuck on the screen with the 'usb -> itunes' and will only allow emergency calls. When i plug it into itunes, of course it wants a supported sim card. Is there anyway around that by hacking it so i can just use it as a itouch and use the wifi?

I can't imagine doing that myself. It seems that there is really no one working on a fix for this so is this the official end of iphone jailbreaking? If the new 3GS has the crippled bootrom then certainly the new iphone coming in June will be crippled as well, unless Cydia works out a deal with Apple. I thought it might have to do with cydia so i stopped that and got rock but it hasn't fixed the problem. The bricking isn't every time after a reboot, just most of the time. It's most likely not the apps i'm downloading since it's always been different downloads that bricks it.

I've been out of the loop on jailbreak news, and just wanted to see if I'm able to update my firmware at this time, while still keeping my tethering hack, and still being able to unlock. Can someone update me on this?

Also, another big issue for me is the tethering hack messes with my visual voice mail a lot. This is really bad for business, as I have been missing clients calls until I reset my network settings.
