open windows explorer, go to file->view options (something like that... i can't verify as i'm on OSX right now), and there should be an option to "show all file extensions" or something like that. Check that, and then you'll be able to write in whatever you want for the file extension.
OR you can higlight the file in itunes, go to "advanced" and select "convert for ipod/iphone", but that will take a long time because it creates a completely new file, which isn't necessary.
