Default Family Plan question...

I'm about to buy two new iPhones (one for me and one for my wife), with the intent of activating on a family plan.

That said, I can't activate my wife's phone until she gets home from her business trip on Friday (or she'd be carrying a paperweight for a couple of days after I ported her number). Given that, could I get both phones and activate only mine, then activate hers on Friday and put them together on a family plan?

If this is possible, how would I activate my phone initially? On an individual plan, or could I specify the family plan of my choice in the activation process, but only setup my phone to start with?
