Is there any way I can change the email fetch setting to 1 min? 15 mins interval is way too long especially when travelling. Thanks

No, but you can arrange push email now through exchange server.

fetching every minute will murder your battery. what email service are you using. if it's corporate email and you have exchange, that's the way to go. you can get push alerts through an app called Boxcar in the app store-it pretty much eliminates the need to have your email fetch at all. you can also have your email forward to one of the email services that the iPhone supports push email through (yahoo, mobile me).

I remember seeing an app in Cydia that lets you fetch at custom intervals(Don't remember what it's called). But like said above, every minute will suck the battery juice away fast.
I use an app store app called PushMail. I think it costs a dollar or two, but it's great/fast at pushing email notifications. And pushing only uses battery when you're receiving emails, only a fraction of what you would use if you fetch every minute.
