Is there a way to force apps that require 3.1 to work on my 3.0.1 phone? Yelp and the new GPush require 3.1, and I'm obviously not upgrading until there's a working JB/unlock for 3.1.

Don't upgrade to them. If you do it accidentally, like I did with Yelp yesterday, go into your trashcan and drag the old Yelp file out. Then delete the Yelp icon in iTunes and drag the old one over from your desktop. Check the box next to it and sync. Shake and enable Monocle again.

Maybe I don't understand what you two are saying...
I want Yelp & GPush that require 3.1. I haven't (and won't) upgrade to 3.1. Is there a way for me to download (and run) 3.1 apps without actually having 3.1?

I don't think so, since you haven't already purchased the app and don't already have the old versions on your computer.
If you had purchased it in the past but deleted it from iTunes this would work; if you had a friend with the old version of Yelp, you could copy the file and paste it into your iTunes (not stealing because in this instance you would have paid for it). But it doesn't sound like you did purchase them in the past and iTunes won't let you download them now.

I have the same question as sposphill - I would like to install apps that will not install with the paraphrased iTunes message "only compatible with 3.1"
Snapture is a good example. Is Snapture really only compatible with 3.1 or is Apple forcing new apps to only be able to install with 3.1 to encourage the upgrade?
I do not see why a developer would write an app that would only work on the new version, unless some new feature was rolled out...but Snapture worked on 3.0 and from what I know, the app was not changed much for the App Store, so the answer must be "B" - Apple is being a dick.
If this is true, is there a way around this?
There must be some tool or "patch" that can fake an iPhone's OS version...
(I did purchase Snapture on my PC so I will have it to install later once the 3.1 JB is out. I did this just in case Snapture ups the price before then)

Do you have insight as to why 3.1 is required? Is it developer coding or Apple foreboding?

Apps are developed for that particular firmware, and although apps are often forward compatible (ie an app such as Tris made for 2.x will work on 3.1) They are not backwards compatible.
I think this is because they are designed and developed using the specific coding in the newer firmware.

While browsing iTunes I noticed several latest release apps are only compatible with 3.1

Just found out today that there is way to change firmware version without upgrade: check out Cydia app FWChanger.
This will trick the iTunes app into thinking that you are on 3.1 (or whatever)
so the download will proceed. However if the app uses specific 3.1 functions
it will not work. I wich I had this a few weeks ago. I will keep this on my phone for the future situations where I am stuck waiting for the next JB...

First, hit "Check FW" and make a note of what your current values are.
For the latest fw version, type '3.1.2' in top box and '7D12' in lower box
and hit "set custom firmware".
Let me know if this works...

Sweet that worked for me, but unfortunately, Redlaser will not work on 3.0 :( I was hoping it would.
