After when you jailbreak and you go into iTunes do you start it as a new phone or you load your previous settings apps e.t.c back onto your phone? Thanks for any help

What program did you use? If you used redsn0w, you shouldn't have gotten those options when you plug in your phone to iTunes.

Are you using a new computer? If not, it shouldn't ask you that.
Setting it up in iTunes after jailbreaking will take you right back to step one, the phone will become unjailbroken so you'll have to rejailbreak.
Here's the process, restore in iTunes to factory settings (if you were previously jailbroken), sync all your apps and media onto it. Then jailbreak. When you plug it back in after jailbreak, iTunes still recognizes it just the same as it did before you jailbroke it, so all you have to do at that point is sync it periodically to keep the iTunes library up to date.

so if i just got my iphone 3g 3.0.1 unlocked and jailbroken. and i have never used itunes in my life befor. can i download i tunes and make an account so i can get the apps from the itunes store. i was told this is ok as long as i dont ever click on update my iphone. i wont sign up for i tunes if it messes up or unjeailbreaks your phone.

Using iTunes with your unlocked phone is fine. Download iTunes and plug the phone in. iTunes should recognize it. You can download apps, music, etc and sync that onto the phone. The only thing you need to avoid is updating the firmware. After 3.1 is released (prob in Sept), when you connnect the phone and open iTunes, a box will pop up saying something like this, "An update for your iPhone is available, do you want to install it?" Updating will remove the jailbreak and unlock, so don't do it unless you are prepared to unlock it again yourself. We can help you through the unlocking steps here.
