so I have this installed on my 3Gs - hit backup - where would I see a "list" of my Cydia apps on the PC/iTunes? where is it being backed up to?

Personally, I prefer PkgBackup ($2.49 in Cydia). It saves its information as a text file in Contacts and you can restore Cydia apps anytime:

that link just shows the splash screen that comes with the app - I hit backup and it rns for less than a second - I was just curious as to where the apps are being "saved"?

If you're referring to the second link, it should go into a description of the app after a few seconds.

Aptbackup just saves a virtual list of what you have installed via cydia. After running it on the iPhone/touch, you need to back-up the device on iTunes. after restoring, you need to restore from that back-up, jailbreak, and re-install aptbackup then run "restore". It will not show you a list, it's essentially storing this stuff as a setting or preference.
