Hi: I just bought a 3g S. I now have a wiped 3g iPhone left over. Instead of selling it can I restore it and use it as an iTouch? Thanks.

You certainly can. Just leave the inactive sim card in the phone. You will need it to use the Itunes restore/firmware upgrade features. Plus the device can still access wifi connections and it will make calls too (over wifi) if you learn how to use VOIP programs like Skype.

Thanks for the quick reply.... One further question: my daughter is on my Family Plan and is using an original iPhone. If I took the sim card out of the now clean 3g and swapped it into her original would it help her phone? Or am I missing something here?... Thanks again...

Wouldn't make any difference in the performance of her phone. That sim card is tied to your number and is now inactive. She wouldn't have any service with it.
