So I removed my SIM and restored my v1 phone. At the end of the restore, it wouldn't do anything, so I had to insert my SIM again so it would finish the process.
The process is now over and the SIM is out, but when I click "phone" it says My Number: (My phone number here).
Is that going to stay until the person I sell the phone to inserts a new SIM? Is that normal? Is there a way to erase it if that is not normal?

Do you mean the phone app icon? I restored jailbroke and unlocked my 3G and when I click the phone icon I don't see my number. Course when I jailbroke it, there was no sim in it.

how do i restore my ipohone 3gs ? as new ?or old account ?

If you are experiencing issues you should first try restoring from a back up...if the problems persist...then restore as a new device.

i already restored as new but with all applications, is that ok ?
and the problem i am facing is the battery usage

Yes that should be fine. If you are still experiencing problems you should contact apple.

I restored the phone and the restore would not complete unless the SIM was in it. Once restored, my phone number shows up (even after removing the SIM) under the Phone icon. Will this change once the person who buys my phone puts the SIM in?

If you go to settings, phone, my number has an arrow next to it, click it and you can edit out the number.

In order to access that "Phone" tab, the SIM must be installed in the phone. Do you suggest putting it back in, doing that, then taking it out?

Yes I would put the sim card in to access that feature

This worked, but I had to put at least one number in there. So the phone is: 1.
