Is your phone Jailbroken? If so, search for the SMS colors in Cydia, install them, and apply them in Winterboard.

Only had the phone a week so no I haven't done anything to it as yet, I figured that I'd play around with simple/stock stuff first to get a feel for things...

Sorry, no theming can be done on a stock phone, you'll have to jailbreak it.

okay... Jailbroken, bit of a ***** as I can't actually do anything this minute as Cyndia can't connect to the internet, fun.... A few quick questions.... How do Cyndia and Installer get apps ( 3G/ wifi? ) I know winterboard has been mentioned here, but I was wondering how/where I can get iphoneinterfacewhich is mentioned in the text colour bubbles guide in the forum?
