I use the air sharing app to get pdf's onto my iPhone.

Readdledocs (http://itunes.apple.com/WebObjects/MZStore.woa/wa/viewSoftware?id=285053111&mt=8) was the one i found best. It even has a web browser built in that allows you to find pdfs online and download them.
