I have a huge amount of icons on my dock. Is there a way I can easily put them in stacks based off of what kind of applications they are? All of the actual applications are located in the Applications folder.

Sure you can. If you go to finder and type "stacks" in the help window, you will find info on how to do this. It is really simple once you see how it is done. The folders go in the area where the trash can is.

Haha, there was a help topic on "Organizing the Dock", the same title as this thread.

Hmm...I'm still not sure on how to add a group of applications into a stack folder...

Folders in the Dock are called “stacks.” A stack can be a handful of documents, a group of applications, or a set of folders—anything you need to use frequently. When you click a stack, it springs open in an arc or a grid, depending on the number of items.
All you have to do is create a new folder, place the apps you want in that folder, and drag it to the right side of the dock next to the thrash can.
