My favorite is one that starts with an "I". I'm not going to post it here because I don't believe it's allowed.
BUT, aside from that, I like Cycorder. It's nice. The audio quality is perfect. The video quality is pretty good, considering the resolution is only 320x240. The file size of the videos are pretty big, and I don't like how it saves them as .mov files.

I'm going to take a wild guess, and estimate that roughly 75% of anything made to run on the iPhone/iPod Touch, has a name that begins with a lowercase i.
Wonderfully (and hilariously) ambiguous.

I'd have to say Quick Gold.
If you don't have it installed, I HIGHLY recommend it. Tap the home button from the SB and bring up a search dialog which will pull up a variety of things - apps, contacts, etc. I have it set up only for contacts, and it's quicker and more intuitive than scanning contacts app, or navigating in through phone app.

That sounds like an awesome app but isn't something I need. I can easily find whatever I need :).
I'm starting to like pdanet a lot.

the only one i use nowadays is Scrobbler... just gotten either bored or fed up with everything else.
If i had a 3G, i'd probably use PDAnet too.

even with edge, pdanet is still good. maybe the speeds just seem faster when on a larger screen
