I had to format my hard drive and by doing so I had to reinstall iTunes. Once I got everything installed and plugged my phone into my computer the software version on my phone went from 2.1 to 2.0 and it never ran better.

If the phone is fairly new, it should have had software Ver: 2.1 on it. A simple restore should do the trick. You would have to set everything up again as it will restore the phone to factory settings. This is as I understand the situation

As far as I know - 2.2 changes your baseband, so you can not go from 2.2 down to 2.1.

True. I was just assuming (wrong of me) that they didn't want to go through the trouble of jailbreaking and going that route.
