you cant but there is a web app called wide mail keyboard that allows you to type your email message in there form using a widescreen keyboard then send from your email.

Thanks, that is too bad I find it much easier to type when the keyboard is horizontal

BiteSMS, SwirlySMS, and MySMS. And for MMS you can use SwirlyMMS. You can download those from Cydia, notice that you can only get Cydia when you jailbreak your iPhone.
