I was wondering if I would buy an unlocked iphone 3g on ebay or some website and use an AT&T sim card would that be able to get me out of paying for the extra 30$ a month? And if it does work what happens if I try to use internet?

I don't think you can unlock the 3G yet. Just jailbreak.
