...how can an unlocked v1 be used? Are people putting different simms in them? If so, you still have to have a contract with a different carrier, right? Can you still use the phone and web and other features with a different carrier? (Sorry this is simplistic, but I haven't talked to anyone about this.)

Well it really depends for each person. Most people with an unlocked v1 are just either using them as an iPod Touch or gave them to a friend to use with their carrier (T-Mobile) or are keeping them in case they need another phone. I've got my v1 unlocked so that I can use it as an iPod Touch and then can use it as an international phone when I go on vacation.
You can use the features of the phone with another carrier as long as with that carrier you are subscribing to some sort of internet package. In the U.S. the only other carrier you can use the iPhone with (mainstream at least) is T-Mobile and they offer a T-Zone data package for something like $6 a month.
