Either I'm missing something, or we're simply not able to send invitations to new calendar events we create on our iPhones.
Can someone confirm this, or better yet, tell me how to do it if it's something we're able to do?

I believe that's an outlook feature more than MS Exchange. Whichever, I've not read anywhere about invitations being supported yet.

I discovered this yesterday that my creating and sending invitations does not work. I can create a calendar event for myself, but I cannot lookup resources, schedule calendar events, or forward an invitation to others. That is really too bad, because the Exchange email is working pretty well, and I am able to receive invitations just fine that show up in my calendar when I accept. So I am pleased with the Exchange support, but it isn't full featured enough yet that I can leave my laptop at my desk and just take the phone with me. I hope this is addressed in an update, and hopefully we don't have to wait for another year for it.

Engadget's latest review segment points out various missing ActiveSync features:
