Why is it you can text on edge but not wifi? Also why is it that you can text while on a call but can't use safari?

sms transmits using the cell towers, not wifi. As for why you can't surf while on a call.. not sure I've never tried but I'd imagine it has something to do with the bandwidth (that's if you're trying to surf with edge while on the call).

You can't surf while on a call because GPRS/EDGE data occupy the same frequency as voice calling. You can only do one or the other and calls take priority. 3G supposedly allows you to call and browse at the same time since 3G data uses its own dedicated frequency. But again, only in a 3G coverage area, not just because you have a 3G phone.

Soloudinhere is correct - GPRS and EDGE use the same spectrum as voice calls and 3G uses different spectrum. You can text while on a call because text messages are a function of the voice system, not GPRS/EDGE (which also explains how non-Internet capable phones can text).
