What exactly is the third party applications, what do they do. Whats the hype about Sdk?

Adds additional applications to your phone. SDK stands for Software Development Kit. With it, software developers can start submitting applications to apple for distribution through itunes. I'm sure apple will want to verify each one, but the best ones should be available soon.

Applications we might see:

MMS
copy/paste
games
IM

The list could go on and on. We'll just have to wait and see.
