Yes you can delete.

You can 'delete' them in tow ways; it depends which one you're talking about.

To delete a single application, just go into 'Uninstall' under Installer and select the app you wish to remove.

Also, if you wish to remove every modification on your phone, you can perform a Restore in iTunes. It will completely wipe your Software.
